first of all, fundamental representations, according to the definition you gave in the article are highly nonunique. Secondly, fundamental representations are not non self-dual in general. Thirdly, the term "fundamental rep" as it's used by physicists seems to me to boil down to: for each specific simple Lie algebra, let's pick by an arbitrary convention (which is agreed upon by all physicists) a particular irrep and call it the fundamental rep.
